Recipe: Banana Loaf

Very simple, very good.

Ingredients

Dry

2 Cups White Flour
1 1/2 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Baking Soda
1/2 to 1 tsp Nutmeg to taste 

Wet

2 Eggs
1/4 Cup Butter
2 Tbsp Milk
1 1/2 Cups Bananas (Just use 3 average bananas)

Process

Mix the the dry ingredients in a bowl and the wet ingredients in a blender. Pour the wet into the dry and mix. Pour into a greased 9×5 loaf pan and bake at 350° for 45 minutes.


Recipe: Mac & Cheese

I never said this was good for you and if you are lactose intolerant it will probably kill you.

Ingredients

1/3 Cup Margarine
1/3 Cup White Flour
3 Cups Milk
2 1/4 Cups Grated Cheddar Cheese (Just use an entire 200g block)
2 1/2 Cups Whole Wheat Macaroni (Just use an entire 375g box)
Salt and Pepper
6 – 8 Crackers 

Process

Cook and drain macaroni as per directions on package. 

Make white sauce: Melt margarine in a thick bottomed pot or double boiler. Add flour and stir into a paste.  Gradually add milk while stirring constantly to get rid of any lumps. Add 2 Cups of cheese and stir until it melts. Add salt and pepper to taste.

Combine Macaroni and sauce in 2 quart casserole dish. Sprinkle top with crushed crackers and remaining cheese.

Bake at 400° for 20 minutes.


Recipe: Whole Wheat Bread

With a last name like “Bakewell”, you have to know how to make bread.

Sponge

3/4 cup warm water
4 1/2 teaspoons active dry yeast
1 cup whole wheat flour

Dough
1 1/2 cups warm water
4 1/2 cups whole wheat flour
2 1/2 tablespoons vegetable oil
1/3 cup honey
1 tablespoon salt
1/2 cup gluten flour (this is what makes it all work) 

 

Step 1: Sponge

Mix the water and yeast together and then add the flour. Cover with plastic and let sit for 45 minutes in warm place (like inside the oven with the light on). It will be bubbly when it’s ready to use.

Step 2: Dough

Take the sponge and add 1 1/2 cups of warm water and 2 cups of flour. Mix well. You need to this before you add any other ingredients so you don’t kill the yeast.

Add the gluten, vegetable oil, honey, and salt. Mix well.

Add the remaining flour about 1/2 cup at a time and mix each time. About half way through adding the flour it will be time to stop mixing and start kneading. If required, add a bit more water (1 tablespoon at a time) as required. Using a standup mixer with the power to handle the whole wheat dough is the only way to go here unless you want a real workout. Knead until the dough does not crack.

Step 3: First Rise

Put the dough in a bowl and cover with plastic wrap. Let rise in a warm place for 1 to 1 1/2 hours (until it doubles in size).

Step 4: Make Loaves
Shaping the loaves is the hardest part. Split the dough into two pieces. Push the air out of each piece and shape them into loaves. Try to get a symmetrical shape without any air trapped in the middle.

Step 5: Second Rise
Grease two 9×5 pans, put the loaves in and cover with plastic wrap. Put the loaves in a warm place until they rise about an inch above the pans. This should take less than an hour.

Step 6: Bake

Turn your oven on to 350 degrees. Do an egg wash if you want a harder crust. Bake for about 40 minutes.  When you take the loaf out of the pan and tap on the bottom you will a hollow sound when it is done. Let cool completely before slicing.
